INGREDIENTS:
- 1 Avocado
- 2 Eggs
- 1 English muffin
- 1 Tablespoon Brasa Sauce
- Butter for greasing the pan
Cut the avocado in half, remove the pit and scoop out the flesh. Mash the avocado in a bowl with a fork and sprinkle with salt and pepper.
Grease a nonstick saucepan with butter and preheat on medium heat. Once the butter starts to bubble, crack the two eggs over the pan. Reduce the heat to medium low and place a lid over the pan.
Cook the eggs until the desired doneness.
While the eggs are cooking, pop the English muffin in the toaster until the desired crispiness.
Assemble the Sandwich.
Place the toast on a plate. Spread the Brasa Sauce on both pieces of toast.
Top one side of the toast with the avocado mash and your cooked eggs. Add your favourite toppings such as lettuce, tomato or fresh herbs. Place the other piece of toast on top.
Serve immediately and enjoy.
