    Eating Pollo a la Brasa is a must for every newcomer in Peru. This dish is a rotisserie chicken served with french fries, and green salad. Inspired by the crazy mixture of flavour and protein-carbs-greens balance, we’ve created a modern version of this family-classic: the Hot Brasa Chicken. 

    Our chicken is spiced and marinated in Peruvian chilli peppers Aji Panca and Aji Amarillo, both native to the Andes Mountains in Peru. They are rich in capsaicin, which is shown to help with weight management, increase energy and help fight cancer cells. 

    Peru is the potato capital of the world with over 3,000 different types. Our potatoes are marinated with a Peruvian superfood known as Panca pepper (Aji Panca). Like all Peruvian peppers, Aji panca is grown in the Andes mountains and is high in antioxidant properties and is full of vitamin A, C, and E, great for your immune system and other health benefits.

    We chose the golden beets instead of the most recognizable red beets to honour the Sun Gate, the main entrance to Machu Picchu. Our beets are peeled and steamed fresh in-house by our friendly team.

    The Hot Brasa Chicken is also garnished with Peruvian salsa; a blend of onions, tomatoes and aji peppers based on Salsa criolla, a famous topping served in traditional Peruvian cuisine. Our special contribution is adding aji amarillo to give a pinch of spice to your meal. 

    Want to dress your chicken with a spicy, yet unique version of chipotle mayo? Our Hot Rocoto Lime sauce is the right choice. We added the superfood known as rocoto pepper. Like all of our dressings and sauces, it is made in-house by our friendly team. Rocoto peppers are rich with vitamin A, C, and E, which are good for your eyesight, your immune system and it helps support healthier skin respectively.

    This meal comes together with our crisp mixed greens, raw carrots, and mint cucumber for added freshness.

    Chifa(Chee-fah) is a fusion between Peruvian and Chinese cuisine, brought to Peru by Chinese immigrants. Reportedly, there are over 6,000 Chifa restaurants in Lima, Peru. Classic East Asian ingredients like ginger, scallions and soy sauce mixed with Peruvian food, creating a never-seen-before mixture. 

    Our beef short rib is marinated with Aji amarillo (aka Peruvian yellow pepper), a Peruvian superfood pepper rich in antioxidants that protects your body against diseases.and helps with digestion. 

    The Peruvian sweety drop peppers (or the “little red things” as renamed by our guests) are a rare superfood native to Peru. Grown in the Amazon jungle they are packed with vitamin A, vitamin C, and iron. This helps boost immunity, strengthen organs, and reduce fatigue.

    Many latin-american countries have their own version of ceviche, but it’s widely accepted that it was created on the Pacific coast of Peru over 2,000 years ago. We want to acknowledge that our version isn’t a traditional Peruvian ceviche. Instead, we’ve taken its best features and made a modern version that includes superfoods and is filled with protein.

    Our imported tri-colour organic Peruvian quinoa is the ingredient that contributes to the rich protein in this meal. Fun fact! Did you know that Peru is the largest quinoa exporter in the world?

    Who knew corn could be so healthy? We did and we’re here to introduce you to this hidden gem! With over 100 different types of corn, Peru’s most famous corn is choclo (aka giant Peruvian corn). Choclo is rich in antioxidants which helps prevent cellular ageing. Fun fact! According to the United Nations’ Food and Agriculture Organization (FAO) corn is the oldest and most produced food in the world 

    To pay homage to the country having over 3,000 types of potatoes and being one of the largest avocado exporters in the world, our Tuna Ceviche Bowl comes with sweet potato and avocado blossoms.

    To recognize and celebrate Peru’s 2,500kms of Pacific Ocean coastline and their thriving fishing industry, we chose sustainable tuna as the most suitable source of protein.

    And to add the extra Peruvian characteristic flavour, the meal comes together with toasted Peruvian corn, cilantro, and red onion.

    The Cusco Chicken Caesar gets its name after the majestic city of Cusco, Peru; this is where Machu Picchu is. Our salad provides tremendous protein to our guests thanks to the organic tri-colour Peruvian quinoa and boneless, skinless chicken thighs raised in Ontario, mixing the best of both worlds. Fun fact!     We’ve added a secret Peruvian ingredient to this salad dressing called huacatay (wah-kah-tie). Huacatay is a Peruvian herb that grows in the Andes Mountains, known to help fight colds, respiratory inflammations, asthma, and even stomach aches or gastrointestinal infections. Finally, we serve this salad with a lemon wedge to add some citrus for those who enjoy it.

Inspired by the beauty of Machu Picchu’s timeless architecture and natural landscape we created this superfood smoothie as a way to pay homage to one of the wonders of the world. 

    We decided to add imported Peruvian cacao nibs, which blend perfectly with the smoothie and add a light chocolate flavour. Cacao nibs are great for stabilizing blood pressure, improving cholesterol levels and known for having antioxidant properties.

    Welcome! You’re about to know one of the most nutritious superfoods in the world, courtesy from Peru. Camu camu is a small cherry-looking berry that grows in the Peruvian Amazon. But don’t let its size fool you. Camu camu is an absolute vitamin C powerhouse that you never knew you needed. Its concentration is so high that one small dose can match to eating ten oranges. Isn’t that amazing?

    We wanted to create the right balance between a high-value superfood smoothie and the taste of everybody’s favourite snack, and after testing and mixing we created the Salted Chocolate Chio.

    This smoothie provides you with a fascinating mixture of flavour and lots of nutrition value. Our secret ingredients for this delicious cold drink are Peruvian pink salt and organic Peruvian cacao nibs.

    Peruvian pink salt is reported to be the healthiest and most nutritious salt on the planet. We added it to our Salted Chocolate Chip Smoothie to compliment the sweet with a sparkle of saltiness. Thanks to its magnesium and sodium, Peruvian pink salt helps stabilize and regulate heartbeats. Its sodium is essential for proper muscular function. It also helps minimize the effects of stress by maintaining proper melatonin, serotonin, and tryptamine levels in the brain.

    When we created Brasa, we fully committed to add superfoods to all of our bowls, dressings and desserts. And our in-house Peruvian chia parfait could be no exception. Get ready for a fresh version of this traditional dessert, full of flavour and high-value nutrients. 

    We also added quick oats to provide high doses of fiber, perfect for an easy digestion. Quick oats are also rich in vitamin B5, B6 and E, manganese and iron. And the parfait’s crown jewel: chia seeds. 

    This seed native to the Americas is known for its high levels of omega 3, calcium, phosphorus and zinc. Chia is proven to improve bone health, manage your weight and improve sugar levels, among many other properties. Did you know that Peru exports over 400 tons of chia per year? 

    Lucuma is superfood grown in the Andean Valley of Peru. This fruit is rich in vitamin C, which strengthens your immune system. The yellowish tone of the fruit (carotenoids) also promotes good eye health. Lucuma is also rich in fiber to improve digestion and support gut health.

    We season our parfait with cinnamon powder and we top it with pineapple and blueberries, both rich in vitamin C. And finally we sprinkle it with shredded coconut and coconut caramel, to enhance the flavour mix.

    Almost every country in Latin-America has their own version, this little and soft sweet treat looks like a cookie, but it has a totally different taste.

    The alfajor's dough isn't crunchy compared to regular cookies, making every bite nice, soft and not so dry. And it’s also gluten-free. 

    The alfajor’s filling is a special caramel called “dulce de leche”, a special filling very similar to toffee in terms of flavour. Dulce de leche is very creamy and its consistency matches perfectly with the cookies. Lastly, our alfajores have some shredded coconut around it to add in an extra fruity touch.

    If what you’re looking for is a light but delicious menu option, our Loaded Avocado Toast is your best option. Our base for this light meal is toasted gluten-free bread, to ensure that everybody can enjoy it. We then add a layer of freshly blended avocado mix, prepared in-house by our great team.

    Our avocado mix has some fresh leaves including mint and cilantro, and some lime juice to enhance its flavour. We were inspired by Peru being within the top three largest exporters of avocado in the world for this delicious mix. 

    In addition, the toast is joined by our Peruvian salsa (criolla), a blend of onions, tomatoes and Peruvian superfood aji peppers.

    Last but not least, we also sprinkle a pinch of Peruvian superfood puffed amaranth, crunchy and popcorn-like grains rich in iron and magnesium. We mixed the amaranth with cacao nibs, which are recognized for stabilizing blood pressure, improving cholesterol levels and known for having antioxidant properties.

    We chose to add cottage cheese for two main reasons: it’s a light cheese that will later translate into an easy digestion and it’s also great for weight management due to its high protein and low calorie amount. 

    For the dressing, we decided to add our signature Brasa Sauce. The Brasa sauce is carefully crafted with the finest ingredients and seasoned by the Peruvian superfood panca pepper, which has high levels of capsaicin, known for assisting in weight management and energy increase.
