Eating Pollo a la Brasa is a must for every newcomer in Peru. This dish is a rotisserie chicken served with french fries, and green salad. Inspired by the crazy mixture of flavour and protein-carbs-greens balance, we’ve created a modern version of this family-classic: the Hot Brasa Chicken.
Our chicken is spiced and marinated in Peruvian chilli peppers Aji Panca and Aji Amarillo, both native to the Andes Mountains in Peru. They are rich in capsaicin, which is shown to help with weight management, increase energy and help fight cancer cells.
Peru is the potato capital of the world with over 3,000 different types. Our potatoes are marinated with a Peruvian superfood known as Panca pepper (Aji Panca). Like all Peruvian peppers, Aji panca is grown in the Andes mountains and is high in antioxidant properties and is full of vitamin A, C, and E, great for your immune system and other health benefits.
We chose the golden beets instead of the most recognizable red beets to honour the Sun Gate, the main entrance to Machu Picchu. Our beets are peeled and steamed fresh in-house by our friendly team.
The Hot Brasa Chicken is also garnished with Peruvian salsa; a blend of onions, tomatoes and aji peppers based on Salsa criolla, a famous topping served in traditional Peruvian cuisine. Our special contribution is adding aji amarillo to give a pinch of spice to your meal.
Want to dress your chicken with a spicy, yet unique version of chipotle mayo? Our Hot Rocoto Lime sauce is the right choice. We added the superfood known as rocoto pepper. Like all of our dressings and sauces, it is made in-house by our friendly team. Rocoto peppers are rich with vitamin A, C, and E, which are good for your eyesight, your immune system and it helps support healthier skin respectively.
